Avocado & Fresh Tomato Salsa
Fresh salsa is a joy to eat and so easy to put together that it seems silly to buy it if I’ve the ingredients to hand, and the ingredients are so easy to get hold of, so why not?!
The addition of the avocado in this salsa gives it a creamy edge, the freshness is brought by the fresh lime juice and zest, and of the tomatoes, of course add body and make the salsa have a juicy and thirst-quenching mouth feel.
When and how would I eat this?
So many times, and so many ways!
In the summer, sitting on top of an open sandwich of just cooked ham. On the side of a plate with crunchy lettuce and a grilled chicken thigh.
Or, other times, inside a doughy wrap filled with sizzling chicken and red pepper fajita doused in Greek yoghurt, one of my favourite ways of eating it.
I’m sure there are many more ways, but whichever way you want to consume, its well worth gathering the ingredients to make this.

What You Need
2 Tubs of Cherry Tomatoes – See Tip Box
1 Large Ripe Avocado
1 Large Shallot
1 Lime – Juice and Zest
1 Clove Garlic
Bunch of Fresh Coriander
Sea Salt – to taste
How It’s Done
Chop the tomatoes into smaller pieces and place into a bowl
Chop the coriander and place into the bowl
Peel the shallot and dice it into small pieces and place in the bowl
Cut the avocado in half, remove the stone and discard it.
Use a sharp knife and run it down the inside of the flesh of the avocado and then across the inside of the flesh of the avocado, leaving cubes of avocado
Push the cubes of avocado out of the skin and into the bowl
Mince up the clove of garlic and add it to the bowl along with the rest of the ingredients.
Zest the lime into the bowl and then add the juice.
Give everything a good mix
Add a pinch of sea salt, give it another mix and then taste
Add more sea salt if needed.
Give another stir
Set it aside for at least 1 hour before serving
Serve at room temperature
Tip Box
Cherry tomatoes – I used cherry tomatoes, but I’ve used larger tomatoes too. If you do use larger tomatoes, once cut in half, remove and discard the seeds before chopping them into pieces.
To Taste – ‘To taste’ means whatever suits your own taste. So, if you prefer more coriander, garlic or lime, add more to suit you.
Salt – Its always possible to add more salt but impossible to take it out, so add a little at a time and mixing before adding more.
