Quick Fresh Tomato Salsa
Fresh ingredients gives this quick tomato salsa a delicious summer feel that’s perfect for times when I need a bit of a flavour boost!
Lots of fresh tomatoes, lots of fresh coriander with zingy lime zest and garlic makes this perfect to add to a plate of fajitas or just as another fabulous side dish on my long out door table , curtesy of the lovely Mr G.
Where I live, when it’s season, there’s always a glut of tomatoes around, and they all seem to come at once, so many it’s difficult to eat them fresh before they go soggy or the birds have them straight off the bushes.
Having lots of ways of eating them fresh before I move on to recipes using them in cooking or preserving them (see my confit tomato recipe) is a must, so this is perfect
Lots of chopping is all that’s needed, no cooking involved, just a spoon for mixing and its done and ready to eat.

What You Need
1 Tub Cherry Tomato – See Tip Box
1 Bunch of Fresh Coriander
1 Medium Red Onion
1 Lime -Zest and Juice
1 Garlic Clove
3 Tbsp White Wine Vinegar
Salt & Pepper
How It’s Done
Slice the fresh tomatoes into 4 pieces and add to a bowl
Slice the red onion into very small pieces and add to the bowl
Mince the garlic and add it to the bowl
Finely chop the coriander and add it to the bowl
Finely grate the zest of the line into the bowl
Juice the lime into the bowl
Add the white wine vinegar to the bowl
Add the salt & pepper to the bowl
Mix everything together
Give it a taste and add more seasoning if needed
Cover the bowl and set aside for 30 minutes, not in the fridge, to let the flavours melt into each other.
Transfer to a serving bowl
Best served at room temperature
Store, covered, in the fridge
Tip Box
Tomatoes – If there are no cherry tomatoes around, find a few ordinary tomatoes. If they’re larger tomatoes, take out the seeds before chopping and added into the bowl.
