Baker & Foodie Content Creator

Hi.

My name is Lee, welcome to my pages. I hope we can have fun together?

When I’m not developing recipes for others, writing guest blogs, writing my own blog, or even trying to learn how to paint, I’m usually spending time with the amazing Mr G (my husband) or with my lovely daughter or my lovely son (very proud mum).

What is this all about? Great question. This site is about real cooking and baking, real recipes and real mistakes.

No filters here, (although i’d love to find a filter that can take ten years worth of laugh lines away. Just me, whats happening, and whatever cameras or phone i have to hand .

There are many things that get under my bonnet and wiggle around, one of those is food waste. If i buy ingredients specifically for a recipe, and i only need a small amount of the ingredients, i want to be able to use the rest up and not have to throw them away. My mum used to say , “Waste not Want not” is that still a saying ?

For me, waste is not just about using up all the ingredients. What about leftover food? If i’m able , i hope to give ideas as to how to use up any leftovers too.

Be Brave

Cooking isn’t hard , neither is baking, its all about being brave and being ok with making mistakes

Quick Fresh Tomato Salsa

Quick Fresh Tomato Salsa

Fresh ingredients gives this quick tomato salsa a delicious summer feel that’s perfect for times when I need a bit of a flavour boost!

Lots of fresh tomatoes, lots of fresh coriander with zingy lime zest and garlic makes this perfect to add to a plate of fajitas or just as another fabulous side dish on my long out door table , curtesy of the lovely Mr G.

Where I live, when it’s season, there’s always a glut of tomatoes around, and they all seem to come at once, so many it’s difficult to eat them fresh before they go soggy or the birds have them straight off the bushes.

Having lots of ways of eating them fresh before I move on to recipes using them in cooking or preserving them (see my confit tomato recipe) is a must, so this is perfect

Lots of chopping is all that’s needed, no cooking involved, just a spoon for mixing and its done and ready to eat.

Go on, give it a go and enjoy your sweet life!

A bowl full of fresh ingredients

 What You Need

  •  1 Tub Cherry Tomato – See Tip Box

  • 1 Bunch of Fresh Coriander

  • 1 Medium Red Onion

  • 1 Lime -Zest and Juice

  • 1 Garlic Clove

  • 3 Tbsp White Wine Vinegar

  • Salt & Pepper

Small tomatoes, chop them smaller!

 How It’s Done

  • Slice the fresh tomatoes into 4 pieces and add to a bowl

  • Slice the red onion into very small pieces and add to the bowl

  • Mince the garlic and add it to the bowl

  • Finely chop the coriander and add it to the bowl

  • Finely grate the zest of the line into the bowl

  • Juice the lime into the bowl

  • Add the white wine vinegar to the bowl

  • Add the salt & pepper to the bowl

  • Mix everything together

  • Give it a taste and add more seasoning if needed

  • Cover the bowl and set aside for 30 minutes, not in the fridge, to let the flavours melt into each other.

  • Transfer to a serving bowl

  • Best served at room temperature

  • Store, covered, in the fridge

Red onion adds a bit of a bite, but chop it small

 Tip Box

  • Tomatoes – If there are no cherry tomatoes around, find a few ordinary tomatoes. If they’re larger tomatoes, take out the seeds before chopping and added into the bowl.

Fresh, zingy and full of flavour
