Hi.

My name is Lee, welcome to my pages. I hope we can have fun together?

When I’m not developing recipes for others, writing guest blogs, writing my own blog, or even trying to learn how to paint, I’m usually spending time with the amazing Mr G (my husband) or with my lovely daughter or my lovely son (very proud mum).

What is this all about? Great question. This site is about real cooking and baking, real recipes and real mistakes.

No filters here, (although i’d love to find a filter that can take ten years worth of laugh lines away. Just me, whats happening, and whatever cameras or phone i have to hand .

There are many things that get under my bonnet and wiggle around, one of those is food waste. If i buy ingredients specifically for a recipe, and i only need a small amount of the ingredients, i want to be able to use the rest up and not have to throw them away. My mum used to say , “Waste not Want not” is that still a saying ?

For me, waste is not just about using up all the ingredients. What about leftover food? If i’m able , i hope to give ideas as to how to use up any leftovers too.

Goats Cheese & Avocado Dressing

I think avocados are like bananas, they’re either rock hard or, and it usually happens when I turn my back for thirty seconds, they become perfect to eat and in the next blink of an eye, they’re over ripe and ready for the bin.

Finding unique ways of using them is always a challenge, so this dressing is a go to for when I blink my eye and those avocados are ready to use!

 Seriously the easiest and most tasty dressing I’ve ever made with just a few ingredients and in the quickest time.

Smooth, creamy and with a lovely mouthfeel, definitely a recipe to keep close to hand when summer is in the air and salad season is here , and even if it’s not, it’s worth having some to hand to smear on some sourdough toast and lay some crispy bacon on the top.

Pale and creamy

 What You Need

  • 2 Ripe Avocadoes

  • 170g Soft Goats Cheese – See Tip Box

  • Juice of ½ Lime

  • Salt & Pepper to taste

Ripe avocados and soft goats cheese

 How It’s Done

  • Place everything, except the salt and pepper, into a food processor and whizz it up until its all mixed and smooth

  • Scrape down the bowl making sure everything is mixed in

  • Once smooth give it a taste and add salt and pepper to taste.

  • Transfer to a serving bowl

 Tip Box

  • Goats Cheese – If you can get hands on some herb and garlic goats cheese, this works really well and adds even more flavour.

  • If the soft goats cheese comes in larger packs, then thats ok, just adjust the rest of the ingredients accordingly.
