Baker & Foodie Content Creator

Hi.

My name is Lee, welcome to my pages. I hope we can have fun together?

When I’m not developing recipes for others, writing guest blogs, writing my own blog, or even trying to learn how to paint, I’m usually spending time with the amazing Mr G (my husband) or with my lovely daughter or my lovely son (very proud mum).

What is this all about? Great question. This site is about real cooking and baking, real recipes and real mistakes.

No filters here, (although i’d love to find a filter that can take ten years worth of laugh lines away. Just me, whats happening, and whatever cameras or phone i have to hand .

There are many things that get under my bonnet and wiggle around, one of those is food waste. If i buy ingredients specifically for a recipe, and i only need a small amount of the ingredients, i want to be able to use the rest up and not have to throw them away. My mum used to say , “Waste not Want not” is that still a saying ?

For me, waste is not just about using up all the ingredients. What about leftover food? If i’m able , i hope to give ideas as to how to use up any leftovers too.

Be Brave

Cooking isn’t hard , neither is baking, its all about being brave and being ok with making mistakes

Frothy Pumpkin Spiced Latte

Frothy Pumpkin Spiced Latte

It’s that time of the year when pumpkin appears in shops, but you don’t have to wait for a seat in your favourite café to enjoy a seasonal latte.

A warming spiced Pumpkin Latte which i added extra protein to by making this with the high protein milk SuperNutrio Whole Milk, but the recipe works so well with the milk of your choice and even a plant based milk.

If it’s a latte, there has to be a frothy top, so heat and whisk more of the milk to be able to add a hefty layer of the white foamy milk.

Frothy or not, it’s worth making this just to be be to able to get that winter warming feeling and fill the kitchen with all those winter smells.

Go on, give it a go and enjoy your sweet life!

What You Need

  • 300ml SuperNutrio Whole Milk - Or milk of choice – Plus more to make milk foam – See Tip Box

  • 50ml Strong Dark Coffee

  • 3tbsp Pumpkin Puree

  • 1tsp Ground Cinnamon – Plus extra to serve – See Tip Box

  • 1tsp Ground Ginger – See Tip Box

  • 1tsp Ground Nutmeg – See Tip Box

  • 1tsp Vanilla Extract

  • 1tsp Soft Brown Sugar – See Tip Box

Pumpkin and spices in the bottom

 How It’s Done

  • Into a heat proof glass or mug, add the pumpkin puree, cinnamon, vanilla, nutmeg, ginger and soft brown sugar.

  • Give it all a really good stir to combine everything.

  • Pour the strong dark coffee over the pumpkin mixture and give it another stir to mix.

Coffee on top of the pumpkin and spices

  • Set it aside until needed.

  • Place the SuperNutrio Whole Milk (or milk of your choice) into a saucepan and heat slowly until it’s just below boiling point.

  • Pour the hot milk over the pumpkin mixture and give it a good stir.

  • Meanwhile, make the froth by adding more milk to the saucepan and heating gently until it comes up to boiling point.

  • While the milk is heating, constantly whisk until the top of the milk has a thick layer of foam.

  • Spoon the milk foam over the top of the pumpkin latte.

  • Shake more cinnamon over the foam and serve hot.

Before the foam

Tip Box

  •  Milk Foam – 1) Adding milk foam to the top of the latte is optional.

2) The trick to making milk foam is to whisk constantly as the milk comes slowly up to boiling point.

  • Spices – How much of the spice to use it down to your taste, so after making your first, if you want to add more, go ahead.

  • Brown Sugar – If you like your latte sweeter, give it a taste and add more brown sugar to suit.

A mug of warm and spicy.
