Braised Peas with Serrano Ham
Even though I have frozen vegetables in the back of my freezer, they’re regularly over looked as some sort of second cousin four times removed, as if they’re less than good.
In fact, frozen vegetables are full of everything that fresh have, and convenient too.
Always there when needed, peas are the perfect vegetable to use as a stand-alone side dish or, as in this dish, deliciously braised along with salty serrano ham.
This side dish is quick, colourful, convenient and a delight to eat.

What You Need
500g Frozen Peas – defrosted and drained
2 Large Onions – Peeled and finely chopped
100ml Chicken Stock – See Tip Box
80g Serrano Ham – cut into small pieces
6 tbsp Olive Oil
4 Garlic Cloves – Minced
Squeeze of Lemon
Salt and Pepper – To Taste – See Tip Box
How It’s Done
Heat the oil in a shallow pan with sides, and then add the chopped onions and a pinch of salt.
Mix well, and on a low to medium heat, let the onions cook slowly until they are soft and begin to colour slightly.
Add the minced garlic and, after giving it a stir, let it cook for 1 minute more.
Tip the thawed and drained peas into the pan, add the chicken stock, the cut up ham and the squeeze of lemon
Another mix together and let the peas simmer on a low to medium heat until the peas are tender - around 5-7 minutes
Transfer to a warmed serving dish or like me, serve straight from the pan
Tip Box
Chicken Stock – I use stock cubes in most of my cooking, but if you’re lucky enough to have home-made chicken stock to hand, use this.
To Taste – Even though this dish needs a little salt and pepper to make it as good as it can be, the serrano ham can be salty. The amount of salt in the ham can determine how much seasoning to add to the dish. So, To Taste means taste before you add any more salt and then adjust it to suit the way you’d like to eat it.
