Hi.

My name is Lee, welcome to my pages. I hope we can have fun together?

When I’m not developing recipes for others, writing guest blogs, writing my own blog, or even trying to learn how to paint, I’m usually spending time with the amazing Mr G (my husband) or with my lovely daughter or my lovely son (very proud mum).

What is this all about? Great question. This site is about real cooking and baking, real recipes and real mistakes.

No filters here, (although i’d love to find a filter that can take ten years worth of laugh lines away. Just me, whats happening, and whatever cameras or phone i have to hand .

There are many things that get under my bonnet and wiggle around, one of those is food waste. If i buy ingredients specifically for a recipe, and i only need a small amount of the ingredients, i want to be able to use the rest up and not have to throw them away. My mum used to say , “Waste not Want not” is that still a saying ?

For me, waste is not just about using up all the ingredients. What about leftover food? If i’m able , i hope to give ideas as to how to use up any leftovers too.

Be Brave

Cooking isn’t hard , neither is baking, its all about being brave and being ok with making mistakes

Apple Pie Overnight Oats

Apple Pie Overnight Oats

Everyone knows that oats for breakfast give you a good start, add high protein SuperNutrio milk and you’re set for the entire day!

If this high protein milk isn’t something you have, these overnight oats work beautifully with cows milk or plant based milk.

Dried and fresh apples give a mood of autumn, and if you top the overnight oats with an extra sprinkle of cinnamon and a hefty drizzle of maple syrup, it becomes an apple pie hug in a bowl.

With qualities of caramel and toffee, maple syrup is just the right sweetener to capture that comforting feeling, so if you’re a lover, go crazy with it.

Make it ahead and set the whole family up for the day.

Go on, give it a go and enjoy your sweet life!

Overnight oats using SuperNutrio high protein milk, or the milk of your choice.

 What You Need

  •  300ml SuperNutrio Semi Skimmed Milk or the milk of your choice

  • 200g Rolled Oats

  • 50g Dried Apple – Cut into small pieces

  • 1 Fresh Green Apple – Skin on, cored and chopped into small pieces

  • 4tbsp Maple Syrup plus more for drizzling – See Tip Box

  • 1tsp Cinnamon plus more for serving – See Tip Box

Chop the dried apple nice and small.

How It’s Done

  •  Find a large bowl and add the oats, pieces of dried apple, SuperNutrio Semi Skimmed Milk, (or other milk if you’re using it) 4tbsp of maple syrup and 1tsp cinnamon.

  • Give it a good stir so everything is thoroughly mixed together.

  • Cover the bowl with cling film and place in the fridge overnight.

  • In the morning, uncover the oats, give it another good stir and then transfer portions to serving bowls.

  • Add the fresh chopped apple to the top of the oats and sprinkle more cinnamon over the chopped apple pieces.

  • Drizzle over maple syrup, then serve and enjoy!

A good mix and then stir through the milk.

Tip Box

  •  Maple Syrup – Maple syrup isn’t overly sweet and there’s not much that has the taste of it, however, if maple syrup isn’t something you like, substitute honey instead, but remember, it’s a little sweeter.

  • Ground Cinnamon – Cinnamon is a combination of sweet and spicy with underlying notes of citrus. It goes great with maple syrup and apple, bringing a warmth that’s perfect for these Apple Pie Overnight Oats.

  • Dried Apples – When sitting overnight, the dried apples will absorb some of the milk to rehydrate ,so if you’d like the oats a little wetter, mix extra into the large bowl before transferring to serving bowls.

Fresh apple in top and a little more spice, g9ives it a little more zoom.
