Hi.

My name is Lee, welcome to my pages. I hope we can have fun together?

When I’m not developing recipes for others, writing guest blogs, writing my own blog, or even trying to learn how to paint, I’m usually spending time with the amazing Mr G (my husband) or with my lovely daughter or my lovely son (very proud mum).

What is this all about? Great question. This site is about real cooking and baking, real recipes and real mistakes.

No filters here, (although i’d love to find a filter that can take ten years worth of laugh lines away. Just me, whats happening, and whatever cameras or phone i have to hand .

There are many things that get under my bonnet and wiggle around, one of those is food waste. If i buy ingredients specifically for a recipe, and i only need a small amount of the ingredients, i want to be able to use the rest up and not have to throw them away. My mum used to say , “Waste not Want not” is that still a saying ?

For me, waste is not just about using up all the ingredients. What about leftover food? If i’m able , i hope to give ideas as to how to use up any leftovers too.

Out of the oven, brush with more mango chutney

An easy recipe to knock up if you are catering for a crowd and want canapés or to add to a buffet.

I love the simplicity and they look really appetising, plus it uses up leftover mango chutney.

It also makes a nice change from sausage roll overload at this time of year!

    Recipe:

  • 1 ready rolled puff pastry sheet

  • 5 spicy sausages - I used plain sausage meat and added 1 tsp of smoked paprika,

  • 1 tsp of chilli powder & a good pinch of cumin

  • Mango chutney

  • Water

    Instructions

  • Unroll pastry sheet and roll to make slightly thinner.

  • Squeeze sausage meat out of sausages

  • Add spices ad mix in well, if not already spicy.

  • Layer over pastry sheet leaving a border around the edge.

  • Roll into Swiss roll starting at long end.

  •  Slice into thin slices.

  • Water down around 3 tablespoons of mango chutney with 1 tablespoon of water and sieve if not smooth.

  • Brush onto sausage wheels.

  • Bake at 200c for around 15-17 minutes.

  • Use another 3 tablespoons of mango chutney and water to brush again when they come out of the oven hot oven,

  • Making sure to wash pastry brush and bowl as the meat is now cooked

  •  Serve warm xx
