Hi.

My name is Lee, welcome to my pages. I hope we can have fun together?

When I’m not developing recipes for others, writing guest blogs, writing my own blog, or even trying to learn how to paint, I’m usually spending time with the amazing Mr G (my husband) or with my lovely daughter or my lovely son (very proud mum).

What is this all about? Great question. This site is about real cooking and baking, real recipes and real mistakes.

No filters here, (although i’d love to find a filter that can take ten years worth of laugh lines away. Just me, whats happening, and whatever cameras or phone i have to hand .

There are many things that get under my bonnet and wiggle around, one of those is food waste. If i buy ingredients specifically for a recipe, and i only need a small amount of the ingredients, i want to be able to use the rest up and not have to throw them away. My mum used to say , “Waste not Want not” is that still a saying ?

For me, waste is not just about using up all the ingredients. What about leftover food? If i’m able , i hope to give ideas as to how to use up any leftovers too.

I’m a little partial to the odd packet of minstrels, or two, so when I’d gone a little crazy and bought multiple packs (my excuse was they were on one of those BOGOF deals) I needed to find a different way to eat them.

This cookie is the way I did it.

A no egg recipe, it’s a great recipe for everyone.

 Give it a go and enjoy your sweet life!

Golden and delicious.

 What You Need

  • 280g Plain Flour

  • 250g Butter-Softened to room temperature

  • 150g Brown Sugar

  • 1 tsp Vanilla Extract

  • 1 tsp Baking Powder

  • 1 Large Pack of Minstrels – See Tip Box

Wrap the minstrel in the cookie dough.

 How It’s Done

  • Place the softened butter into a bowl and beat until light and airy.

  • Add the vanilla, and beat again.

  • Mix the flour and baking powder together.

  • Add the flour mix to the beaten butter mixture

  • Beat again until it comes together into a dough.

  • Scrape down the bowl and place it into the fridge until its firm enough to handle – around 30 minutes.

  • Heat the oven to 180c.

  • Line a couple of baking trays with non-stick baking parchment or silicone mats.

  • Once the dough is cold enough to handle, scoop out balls about 1 inch round

  • Push one minstrel into each ball.

  •  Roll to reshape into a ball and seal the dough.

  • Place the cookies, 2’ apart, onto the prepared tray and press down to make a thumb print in the top.

  • Put a minstrel into the top of the cookie dough and press it down.

  • Place the trays into the hot oven and bake for 12-15 mins until they are a pale colour around the edges.

  • Let them sit on the tray to cool for 5 minutes before transferring to a cooling rack.

  • Minstrels - This recipe works really well with smarties.
