Hi.

My name is Lee, welcome to my pages. I hope we can have fun together?

When I’m not developing recipes for others, writing guest blogs, writing my own blog, or even trying to learn how to paint, I’m usually spending time with the amazing Mr G (my husband) or with my lovely daughter or my lovely son (very proud mum).

What is this all about? Great question. This site is about real cooking and baking, real recipes and real mistakes.

No filters here, (although i’d love to find a filter that can take ten years worth of laugh lines away. Just me, whats happening, and whatever cameras or phone i have to hand .

There are many things that get under my bonnet and wiggle around, one of those is food waste. If i buy ingredients specifically for a recipe, and i only need a small amount of the ingredients, i want to be able to use the rest up and not have to throw them away. My mum used to say , “Waste not Want not” is that still a saying ?

For me, waste is not just about using up all the ingredients. What about leftover food? If i’m able , i hope to give ideas as to how to use up any leftovers too.

Leftover Curry!

This is exactly what it says it the title, a curry using what I had in the fridge, and that included cauliflower leaves and stalks, radishes, some cooked celeriac, a handful of mini tomatoes, an onion and half a packet of wild rocket.

Plenty to make an amazing curry dish!

 I’ll say once again, there are somethings that get thrown away in kitchens that don’t need to be, one of those is cauliflower stalks and leaves.

 I think I must be repeating myself to the converted by now, but just in case, check out all the FREE downloadables on this site, and you’ll get lots of ideas of how to us leftovers, a curry is definitely there.

 And then there are the radishes, not just for salads, and If I had my choice, I’d use them in cooking every day of the week.

 Find what you’ve got in your fridge and use some curry spice combinations to make a dish that suits your pallet.

 I was gifted a range of spices from Lajina Masala and chose to use the curry masala.

It worked really well and only needed two tablespoons to get the heat that I wanted. The mixture had lots of layers of flavour which meant I didn’t have to add any more to it at all.

 Go in, give it a go and enjoy your sweet life!

 What You Need

  •  Leftover Hard vegetables e.g: radishes, cauliflower stalks and leaves, celeriac etc

  • Leftover soft vegetables: tomato’s, cabbage, hard lettuce hearts, peas and rocket etc

  • 1 Tin of tomatoes

  • Milk

  • 1 large onion-chopped

  • 1-2 Tbs Curry spices of choice - I used Lajina Masala

  • Oil for cooking

 How It’s Done

  • Heat the oil in a deep frying pan or wok

  • Once hot, put in the chopped onion.

  • Turn the heat down and cook the onion until is transparent

  • Add the spices and cook on a medium heat for 2 minutes, stirring constantly

  • Time to add the hard vegetables to the hot onion and spice mixture.

  • Give them a stir to coat them all

  • Add the tinned tomatoes to the pan

  • Another stir, and then add enough milk to make a very liquid paste – See Tip Box

  • Another mix then place a fitted lid on top and let it cook for around ten-fifteen minutes until the vegetables are fork soft but still have a bite to them

  • This is the stage to add the soft vegetables (not the soft salad leaves) – See Tip Box

  • Place the lid back on and let cook for another 5-7 minutes.

  • Taste and add seasoning if needed - salt and pepper

  • Serve with or without rice

I used Lajina Masala Curry Masala mix

 Tip Box

  •  Add Milk – Add enough milk to come 1/3 up the pan

  • Veg – There is a difference between cooking the hard veg and the soft veg. hard needs cooking longer. If you have any soft salad leaves, such as soft rocket, only add them 5 minutes before the end of cooking so they wilt

So easy and so tasty!
