Fish Finger Sandwich with Roasted Garlic & Tabasco Marie Rose Sauce
I’ve been a bad, bad girl, and I dragged the lovely Mr G down the path with me.
The lovely Mr G and I have just got back from a fabulous weekend trip to see my very grown up son, just had his 29th birthday, and his fiancé.
Driving back wasn’t, or shouldn’t have been an issue. Just a nice drive from Greenwich to the beautiful county of Durham where we live.
We were taking a detour into Derby to have a look at what will hopefully be the new member of our family, a Hungarian Vizsla Puppy.
This is where things started to go a little astray.
Instead of taking the road we know would lead us to where we wanted to go in time to see our future furry baby, we made a mistake by trusting the Sat Nav to get us there.
Even when I lived in the London area, I never took the time to go see as many tourist spots as we did because of that Sat Nav.
Who knew that it was possible to drive over Lambeth Bridge taking in the sight of the impressive Houses of Parliament, pass by Buckingham Palace, through Marble Arch, Fortnum & Mason, Piccadilly Circus, down Oxford Street, The Mall, a trip to Trafalgar Square, Nelsons Column, go down Regent Street taking in the Ritz on our left, all in one trip?
I’m not even sure if we saw them in that order, probably not. It’s all a bit of a blur really.
Taking an hour, having to pay £15 congestion charge, made us too late to see the new pup. We got home around 7pm and very hungry, which is when I found myself encouraging the lovely Mr G to join me in doing a bad thing with frozen fish fingers, bake in the oven multi seeded ciabatta and a home-made Roasted Garlic & Tabasco Marie Rose Sauce with a few oven roasted onions.
It took about 5 minutes to make the sauce, because I love roasted garlic so much, I always have some wrapped up in a little packet of foil in my fridge.
Probably unlikely that you have one of these beautiful packages lurking, so hopefully you’d have a little more time to make your sauce giving you a chance to wrap some garlic cloves in foil and pop them into a hot oven for 45 mins.
If you’re going to roast some bulbs of garlic, I recommend on adding a few more than you originally planned. Trust me, once you taste and start to use them as a subtle garlicky flavour in your cooking, sandwiches salads etc, you’ll wish you had a roasted garlic package lying in wait in your fridge for just this sort of occasion.
What we ended up having to eat was a couple of fish finger sandwiches with oven roasted onions, also a staple of mine taking up room in the fridge (don’t judge), on a few rocket leaves and I used the Sauce as a flavourful substitute for butter.
Oh, and a good amount of gin with elderflower tonic too.

Fish Finger Sandwich with Roasted Garlic & Tabasco Marie Rose Sauce
What You Need
4 Tablespoons Mayonnaise
2 Tablespoons Ketchup
½ Teaspoon Tabasco – See Tip Box
1 Teaspoon Worcestershire sauce
3 Cloves of Roasted Garlic – See Tip Box
How It’s Done
Squeeze out the soft inside of the roasted garlic into a bowl and squish with a fork – See Tip Box
Add all of the other ingredients into the bowl and mix really well.
It’s that easy.

Tabasco – If you like it a little more spicy, go ahead, add more of this
Roasted Garlic – a) As I’ve mentioned, make more of these than you need for this recipe and store them in your fridge for a up to three weeks.
b) To Make- Rub the garlic bulbs to loosen all the flaky outer skin and discard this bit. Place the whole bulbs of garlic on some foil and sprinkle with a little bit of olive oil. Wrap them loosely in the foil and put them in a hot oven (180c) for up to an hour until they are very soft in the middle. Enjoy
c) When squishing the garlic, there will still be lumps. That’s ok, it’s nice to have little chunks in the sauce.
