My name is Lee, welcome to my pages. I hope we can have fun together?

When I’m not developing recipes for others, writing guest blogs, writing my own blog, or even trying to learn how to paint, I’m usually spending time with the amazing Mr G (my husband) or with my lovely daughter or my lovely son (very proud mum).

What is this all about? Great question. This site is about real cooking and baking, real recipes and real mistakes.

No filters here, (although i’d love to find a filter that can take ten years worth of laugh lines away. Just me, whats happening, and whatever cameras or phone i have to hand .

There are many things that get under my bonnet and wiggle around, one of those is food waste. If i buy ingredients specifically for a recipe, and i only need a small amount of the ingredients, i want to be able to use the rest up and not have to throw them away. My mum used to say , “Waste not Want not” is that still a saying ?

For me, waste is not just about using up all the ingredients. What about leftover food? If i’m able , i hope to give ideas as to how to use up any leftovers too.

Festive Spiced Hot Chocolate - Goats Milk Recipe

Drink yourself, making for friends or leaving it by the fireplace for Santa, this Festive Spiced Chocolate is the perfect tipple this winter season!

St Helens Farm goat milk (find their website here) mixed with real milk chocolate, helps make the spiced chocolate creamy and delicious.

Spices of ginger and nutmeg with hints of vanilla give warm comforting notes to an already scrumptious drink.

Make the spiced chocolate more delightful by adding orange zest, rum or even Irish cream liqueur to the mix, thats my families hot chocolate tipple.

Drink it warm with alcohol or without!

What You Need

  •    500 ml St Helen’s Farm goat milk

  •   100g Milk Chocolate - Chopped into small pieces– See Tip Box

  •    1 teaspoon vanilla extract

  •     ½ teaspoon cinnamon

  •   ½ teaspoon ground ginger

  •     ½ teaspoon nutmeg

  •    2 teaspoons sugar

The smaller the pieces of chocolate, the quicker the chocolate will melt.

 How It’s Done

  •    Place the chopped chocolate into a saucepan along with the milk

  • Stir in the sugar, cinnamon, ginger, vanilla and nutmeg

  •    Gently heat the milk until the chocolate has melted and it becomes smooth and creamy.

  • Heat until just below boiling, stirring constantly, making sure that the chocolate has melted and what’s left is a smooth drink – See Tip Box

  •     Serve warm in a pretty mug.

Warm gently to allow the chocolate to melt, and avoid letting it boil!

Tip Box

  •    Chocolate – 1) Substitute 3 Tbsp Cocoa powder for the chopped chocolate.

2) Don’t use drinking chocolate as it has too much sugar content and will make the drink over the top sweet.

  •     Treat it up – 1) For a special treat add some grated orange zest, brandy, rum or Irish cream liqueur.

2) For an extra treat, throw a few mini marshmallows on the top just before serving and then grate a little more chocolate over the top.

  • Boiling – Try to avoid boiling the mixture, just heat it slowly, it tastes much better piping hot but not boiled.

A warm cosy drink all through those cold months.
