Slow Cooker Pulled Pork by Lizzie Turner-Jones
This recipe is a real favourite with our family. It takes just moments to prepare and I can leave it cooking away all day, knowing that the house will smell divine when I get home and that all I need to do is serve up!
We tend to enjoy it in brioche buns with homemade coleslaw, and a fresh salad.
Ingredients
170g BBQ sauce
3 tbsp tomato puree
1 tsp cumin
1 tsp garlic powder
1 tsp paprika
60ml white wine vinegar
1.2 - 1.4kg pork shoulder joint, skin, fat and butcher’s string removed
Method
Add all of the ingredients except for the pork to the slow cooker bowl and stir well to combine
Add in the pork and turn it over in the sauce repeatedly so that every bit of it is covered
Pop on the slow cooker lid and cook on low for 6-8 hours
Remove the pork and gently pull apart using two forks
Add the pulled meat back to the slow cooker bowl and stir thoroughly in the juice
Pop the lid back on and leave to cook for another 20-30 minutes while you make your salad etc.
Serve and enjoy!
