Marmite, Cheese & Ham Tear & Shear Bread Swirls. By Robert Allen

My Recipe is Marmite, Cheese and ham, Tear and Share bread swirls
I’ve been toying with the idea of baking these for a while and started with a basic bread dough, adding different flavours, to see what works.
I Love Marmite, so I just had to try using marmite in them first.
Ingredients
250g Strong Bread flour
7g dried yeast
7g salt
160g water A little grated Red Leicester cheese
A pinch of garlic salt (or 1 clove of garlic finely grated)
2 Tsp dried mixed herbs
1 Tsp Marmite and .
5 Tsp Hot water Mixed together
8. 50g Extra Mature cheddar (grated)
9. 8 slices, thin smoked ham.
Method
1. Put Bread flour into a bowl
2. Add the yeast at one side and salts and herbs to the other and mix together
3. Pour in most of the water and mix together, to form a dough, adding the rest of the water, to pick up any flour left in the bowl.
4. Tip the dough onto your worktop and knead for 8-10mins, then add the Red Leicester cheese, mix in and form a ball
5. Place into an oiled bowl, cover with a tea towel and prove for an hour, or until doubled in size.
6. Knock the dough back by punching it. (This part is so satisfying)
7. Tip onto a floured surface and rollout, into a rectangle (35cm x30cm)
8. Mix Marmite and hot water together, so you have a runny consistency and spread over surface of rolled out dough.
9. Sprinkle grated extra mature cheese on top of marmite and place slices of ham on top of the cheese (2 rows of 4)
10. From the longest end, roll dough tightly like a Swiss roll.
11. Slice through dough, 1.5cm slices and lie onto a lined baking tray (you should get 16-20 slices) leave enough room for them to prove.
12. Cover and prove for approx 45 mins.
13. After 30 mins put oven on to 220c fan to heat up.
14. Once proved, place tray into oven and reduce temperature to 200c fan.
15. Bake for 12-15 mins. Remove from oven and slide off baking paper, onto a wire rack to cool.
16. Melt a little butter in a dish, then add a touch of marmite and stir together, brush over the top of swirls to glaze them
If Marmite is not to your liking, you can substitute this for mustard. If you like a little heat, try sprinkling some chilli flakes over the cheese too. There’s quite a few variations you can use within these.
